If you are looking for statistics about when you promised you would ship and orders to a customer and when you actually did then there is a nice inquiry screen in sales and marketing called shipment deviation. It will let you see in a summary for the difference between for example the confirmed ship and actualy. You can also choose to look at estimated, confirmed, requested based on what fields you use and populate on the sales order.
This would be handy as you can also export to excel easily enough to do some basic analysis.
